For several years, Pierre Marcolini has been sublimating his recipes with Asian citrus fruits such as yuzu, Buddha’s hand and sudachi. This summer, the master chocolate maker chose citrus fruits from Southern Europe to satisfy our appetite for goodies.
The chef, striving for an impeccable supply of raw materials, selected the best European producers to bring us the most beautiful citrus of the Mediterranean Sea. Oranges from Valencia, bergamot from Calabria, lemons from Nice … Expect to taste sour notes, spicy zest, tender flesh and the subtle bitterness. In the form of infusions, compotes and candied fruit, their vibrant freshness is even more evident. The result is delicious summer treats.
