A new addition to the Brussels food scene – the launch of an exciting new restaurant group: 90 Follies, reimagining the Belgian brasseries of tomorrow. Boemvol, their first address in the Belgian capital, opens right next to the Brussels Stock Exchange on 6 June 2025.
Nonante Folies is the story of a group of bon vivants keen to bring Belgian dining traditions up to date. Building on the fact that Belgium is the land of real carbonade, the group aims to reinvent the codes of the Belgian brasserie and to focus on local produce, traditional food and good vibes. Boemvol, their first address in Brussels, opens right next to the Brussels Stock Exchange on 6 June 2025.
Founded by two entrepreneurs with a passion for good food, Maxime Grell and Ludovic Chevalier, the new Nonante Folies group has set itself a mission: to create places that exude Belgium, serve classic local dishes and highlight the skills of the craftsmen from the low lands.
Boemvol, the best of Belgium on your plate
Under the direction of chef Alix Gascoin, the menu of this new restaurant will feature emblematic dishes such as carbonnade à partager, croquettes and a revisited vol-au-vent for vegetarians. All of this, enhanced by local nuggets and a unique wine list, always taking care to give pride of place to small producers from the kingdom of stoemp.

Fresh beer and a warm heart Boemvol, the group’s first restaurant, has set up shop in an exceptional setting in the heart of Brussels, a stone’s throw from the legendary Bourse. Housed in a listed building, the restaurant is prepared to treat 140 guests inside and 60 on the terrace. The nearly 500m2 space, whose warm design is the work of architect Zazie Maquet, will be run by a 25-strong team of talented people, all of whom are as warm as they are well-versed in a menu prepared with the finest ingredients.
After Boemvol in spring 2025, the group is also planning to open its second establishment in a prominent address in Ixelles that has been completely renovated. A legendary venue, well known to Brusseleirs, promises to rekindle a passion for traditional cuisine in a historic and festive setting.
