Maison Dandoy & Brussels Beer Project collab: New biscuit & new beer

The young brewery Brussels Beer Project is located in the Brussels Dansaert district, near the Zenne where Brussels beer originated, and close to historic Dandoy, where delicious family recipes are passed on from generation to generation. Both craft companies have now joined forces to develop a new tour de force: speculaas with beer. The basis of this divine food is nothing more than brewer’s grain, also called trot, a residual product of the barley malt used for brewing. Of those bostel is a flour that is mixed with the secret gingerbread mixture. The speculoos that cannot be sold because they are broken are in turn transported to the brewery where they are used in a new experimental beer.

Every month the Brussels Beer Project comes with a new unique and original one formula for the day. Every season, the Maison Dandoy surprises us with natural and authentic products. The beer speculoos also tastes wonderfully like the almonds and cinnamon Dandoy added. Autumnal flavors for a light gourmet beer and a biscuit with a malt flavor that will blush your cheeks magic, the result of the collective cradle-to-cradle thought of a young person wench from 2013 and a respectable old lady from 1829, who are determined to to give us a festive Indian summer.

The bottles of the beer, which was named “Tough Cookie” in homage to the second life that the Dandoy speculaas will get will be available in the Dandoy boutiques and the brand’s emblematic golden sphere on their label to wear. It is a very dark stout beer with a pleasant round taste and a perfume of grilled hazelnuts. The taste of the cookies contained in it draws notes of cinnamon and cloves. Brussels Beer Project has used a total of more than 30 kg of broken speculaas for the 8000 bottles, in addition to a blend of 7 types of malt and 6.5% alcohol.

Background info – Belgian brands with a story

The Brussels Beer Project is a participatory project aiming to breath new life into the Belgian brewing world. Their experimental brewery is located in the Dansaertstraat in Brussels. BBP does not only bring 40 temporary limited editions per year on the market, but also 6 permanent beers preferred by its community, including the Delta IPA and the Jungle Joy. The company has been innovating in the field of circular economy since 2015 and plans to install a sample brewery 2.0 in Anderlecht by the end of 2020.

Maison Dandoy, a family history since 1829. Jean-Baptiste, artisan baker, opened his first shop on the Grass market, in the heart of Brussels. Thirty years later, he moved to the Boterstraat, where he thought the trade to his son Philippe. 150 years later, the Dandoy Dynasty is still in a great condition and Saint Nicholas still looks approvingly on the piles of sweet goodies.
