The terrace of le Chalet de la Forêt is now open! Here, the product is not disguised. It is sublimated in a cozy setting, conducive to relaxation and peacefulness. The Chalet de la Forêt is certainly a starred house, proud of its roots and guarantor of ancestral traditions, but it is also a laboratory that adapts to new desires and lifestyles. An elegant, exclusive address that wants to be accessible to all.

Seen from the sky, Le Chalet de la Forêt looks like a large bourgeois residence on the edge of the Sonian forest. A singular place, an exclusive gastronomic entity, a link between the city and its outskirts, which its chef-owner, Pascal Devalkeneer, has been dreaming up and building, stone by stone, dish after dish, for twenty years. After winning a second star in the Michelin guide in 2012, his establishment is now one of the very select clubs of the Grandes Tables du Monde and Relais & Châteaux. A consecration for this self-taught cook, who, even in the firmament of Brussels gastronomy, is never ostentatious, creative narcissism or avant-garde at all costs, but rather in a discreet and constant quest for accuracy, balance between cooking and nature, between the plate and what surrounds it.

The Chalet de la Forêt has been enriched with an ecological and natural vegetable garden. An approach as hedonistic as it is purist, like the cuisine created by its chef, Pascal Devalkeneer. For the Chef, the vegetable garden had to combine aesthetics and eco-responsibility and it took the synergy of market gardening experts, seasoned entrepreneurs and all the inventiveness of Erik Dhondt, garden architect to create this magnificent garden of flavors from scratch. Together they mixed genres, beds of English-style herbaceous plants organized by color and divided the space into plots in the style of French gardens.

The varieties planted have been carefully selected to create a natural self-regulation of the vegetable garden. All bins are irrigated and fed or protected in a natural way through the use of compost and manure. An eco-responsible approach that does not hide its ambition to obtain an eco-label.
